9/8/10: How to Bottle up Summer

One of the best parts of summer is eating the fresh tomatoes produced by our garden.  But, sometimes we can't eat fast enough to keep up with our plants' production.  So, I bottle the summertime tomatoes up by freezing them!  Here's how:
 Throw the tomatoes into a pan of boiling water

 
Watch the tomatoes carefully.  After about 2-3 minutes, the skin on the tomatoes should split.  Use some kitchen tool to remove the tomato from the water.
 Place tomato into a bowl filled with ice and water in order to cool.

 
Allow to cool for several minutes while you juggle the needs of your children, etc.  Remove from the ice bath and remove the skins from the tomatoes.  The skin should easily separate from the tomato. 

 
Dice into small pieces or leave whole depending on your preference.

Place the diced pieces into a freezer safe container and freeze.  Enjoy year round!
